Vanilla & tea poached fruit

  • 1 x 500g pkt dried fruit medley (Angas Park brand)

  • Boiling water

  • 1L (4 cups) boiling water, extra

  • 3 English breakfast tea bags

  • 400g (2 cups) raw caster sugar

  • 1 vanilla bean, split (Queen Fine Foods brand)

  • 1 x 7cm-long cinnamon stick

  • Thick natural yoghurt, to serve


  • Step 1

    Place dried fruit in a heatproof bowl. Pour over enough boiling water to cover. Set aside to soak for 20 minutes or until soft. Drain and set aside.

  • Step 2

    Meanwhile, combine the extra water and tea bags in a heatproof jug. Set aside for 10 minutes to infuse. Remove tea bags.

  • Step 3

    Transfer tea to a heavy-based saucepan. Add sugar, vanilla bean and cinnamon stick and stir over medium heat for 2 minutes or until sugar dissolves. Bring to the boil. Add fruit and reduce heat to low. Simmer, uncovered, for 30 minutes or until fruit is soft. Remove from heat and set aside for 15 minutes to cool. Cover loosely with plastic wrap and place in fridge for 1 hour to chill.

  • Step 4

    To serve, remove bean and cinnamon stick. Place fruit in bowls with a dollop of yoghurt.
