Fresh tuna is a surprise filling for these healthier burritos.

Ingredients

4 small flour burritos

2 tablespoons olive oil

4 (about 180g each) tuna steaks

4 ripe tomatoes, finely chopped

1 red onion, finely chopped

1/2 cup (85g) pimento-stuffed olives, thinly sliced

1/4 cup (50g) drained capers

2 tablespoons drained jalepeno chillies, chopped

1 tablespoon lime juice

Coriander leaves, to serve

Step 1
Preheat a char-grill on high. Brush burritos with a little oil and cook on preheated grill for 1 minute each side or until lightly charred.

Brush tuna steaks with a little oil and season with salt and pepper. Cook for 1-2 minutes each side for medium, or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest.

Meanwhile, combine the tomato, onion, olives, capers, chilli and lime juice in a medium bowl. Drizzle with remaining oil and gently toss to combine. Season with salt and pepper.

Thinly slice the tuna and add to tomato mixture. Toss to combine. Place burritos on serving plates. Top with the tuna mixture and sprinkle with coriander.
