  • 1/3 cup (80ml) extra virgin olive oil

  • 4 cloves garlic, thinly sliced

  • 500g vine ripened tomatoes, roughly chopped

  • 1/2 teaspoon smoked paprika

  • 1/2 teaspoon sugar

  • 1 tablespoon fresh thyme leaves

  • 1 tablespoon fresh oregano leaves

  • Sea salt and freshly ground black pepper to season

  • 500g cooked cocktail prawns

  • 375g thin spaghetti

  • 100g Clover Creek Tasmanian feta, crumbled

  • Finely grated zest of 1 lemon


  • Step 1

    Place half the oil and garlic in a large frying pan and cook gently for a few minutes until garlic softens. Add tomatoes, paprika, sugar, half the thyme, oregano, salt and pepper; cook over medium heat for about 5 minutes, or until tomatoes have softened slightly. Add prawns and gently cook until just heated through.

  • Step 2

    Meanwhile, cook pasta in a large pan of salted, boiling water until just tender. Add drained pasta to sauce and toss until well combined.

  • Step 3

    Divide pasta between four serving bowls. Sprinkle fetta, lemon zest and remaining thyme leaves over each bowl, and drizzle with remaining olive oil. Serve immediately.
