Sesame beef noodle stir fry

  • 1/2 cup dark soy sauce

  • 2 teaspoons sesame oil

  • 2 teaspoons caster sugar

  • 250g Chang’s Vermicelli Rice Noodles

  • 1 tablespoon sesame seeds

  • 2 tablespoons peanut oil

  • 2 eggs, lightly beaten

  • 500g beef fillet, thinly sliced diagonally

  • 1 carrot, cut into thin sticks

  • 1 brown onion, halved, thinly sliced

  • 125g button mushrooms, sliced

  • 2 green onions, thinly sliced


  • Step 1

    Whisk together soy, sesame oil and sugar. Set aside. Place noodles into a large bowl. Cover with cold water. Stand for 10 minutes or until tender. Drain.

  • Step 2

    Heat a wok over medium heat. Add sesame seeds. Stir-fry for 2 minutes or until golden. Set aside. Add 1 teaspoon of peanut oil to wok. Swirl to coat. Add eggs. Swirl around wok to form a thin omelette. Cook for 1 minute. Transfer to a board. Roll up tightly. Thinly slice. Set aside.

  • Step 3

    Increase heat to high. Add 2 teaspoons of peanut oil to wok. Add one-third of the beef. Stir-fry for 1 minute or until browned. Set aside. Repeat twice with oil and remaining beef.

  • Step 4

    Add remaining 1 teaspoon of oil, carrot, onion and mushrooms to wok. Stir-fry for 3 minutes or until tender. Return beef to wok with green onions, egg and sesame seeds. Add soy mixture and noodles. Toss until combined and heated through. Serve.
