Yummy Quinoa porridge Recipe

For a delicious winter breakfast, try this wholesome quinoa and apricot porridge.

Ingredients

  • 1 cup (200g) Coles Brand Australian White Grain Quinoa, rinsed

  • 1 1/4 cups (310ml) milk

  • 1/4 cup dried apricot, chopped

  • 1 tablespoon caster sugar

  • Fresh fruit, to serve

  • Honey, to serve

Method

  • Step 1

    Place quinoa and 2 1/2 (625ml) cups of water in a saucepan over medium heat. Bring to the boil. Reduce heat to low. Cook, covered, for 10 mins

  • Step 2

    Add the milk and apricot and stir to combine. Cook, covered, stirring occasionally, for 10 mins or until quinoa is tender. Stir in the caster sugar

  • Step 3

    Divide the porridge among serving bowls. Serve topped with fruit and drizzled with honey
