Burnt butter and sage make this pumpkin and potato mash extra special.

1kg butternut pumpkin, seeded, peeled, chopped
1 large washed potato, peeled, chopped
2 tablespoon sour cream
40g butter, chopped
8 sage leaves
Boil, steam, or microwave the combined pumpkin and potato until tender. Drain. Use a potato masher or fork to mash in a?large bowl until smooth. Stir in the sour cream until well combined. Season.
Melt the butter in a frying pan over medium heat. Add the sage and cook for 3-4 mins or until the butter is golden and sage is crisp. Spoon the pumpkin mash into a serving bowl. Drizzle over the butter mixture to serve.
