Ingredients

  • 1kg butternut pumpkin, seeded, peeled, chopped

  • 1 large washed potato, peeled, chopped

  • 2 tablespoon sour cream

  • 40g butter, chopped

  • 8 sage leaves

Method

  • Step 1

    Boil, steam, or microwave the combined pumpkin and potato until tender. Drain. Use a potato masher or fork to mash in a?large bowl until smooth. Stir in the sour cream until well combined. Season.

  • Step 2

    Melt the butter in a frying pan over medium heat. Add the sage and cook for 3-4 mins or until the butter is golden and sage is crisp. Spoon the pumpkin mash into a serving bowl. Drizzle over the butter mixture to serve.
