  • 4 cups Coles brand real chicken stock

  • 1 cup instant polenta

  • 1/3 cup finely grated parmesan

  • Spray olive oil

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, crushed

  • 400g can diced tomatoes

  • 2 teaspoons balsamic vinegar

  • Pinch of sugar


  • Step 1

    Line a 32cm x 22cm shallow tin with foil. Bring the stock to the boil in a medium saucepan over high heat. Gradually add the polenta, stirring constantly. Reduce heat to medium-low. Cook, stirring, for 3 mins or until thick. Stir in the parmesan. Spread into the prepared tin. Chill for 30 mins or until firm.

  • Step 2

    Meanwhile, to make the tomato relish, heat the olive oil in a small saucepan over medium heat. Add the onion and cook for 5 mins or until soft. Add the garlic and cook for 1 min. Add the tomatoes and bring to the boil. Reduce heat to medium-low and simmer, stirring occasionally, for 5 mins or until reduced and thickened. Stir in the vinegar and sugar. Season to taste.

  • Step 3

    Preheat oven to 200°C or 180°C fan. Line 2 large baking trays with baking paper. Turn the polenta onto a board and remove foil. Cut into batons about 1.5cm thick and 10cm long. Place on the prepared trays and spray with oil. Bake for about 30 mins or until crisp and lightly browned. Serve warm with the relish.
