We’ve combined two family favourites – hash browns and beef mince – to create a doubly delicious dinner.

  • 1/3 cup extra virgin olive oil

  • 400g beef mince

  • 1 green capsicum, finely chopped

  • 1 small brown onion, finely chopped

  • 410g can tomato purée

  • 1/4 cup tomato sauce

  • 1/4 cup barbecue sauce, plus extra to serve

  • 1 tablespoon Worcestershire sauce

  • 1 tablespoon brown sugar

  • 1 teaspoon dijon mustard

  • 1 tablespoon red wine vinegar

  • 1kg red-skinned potatoes, peeled

  • 1/3 cup plain flour

  • 2/3 cup coarsely grated colby cheese

  • 2 tablespoons drained pickled jalapeños, to serve

  • 80g mixed salad leaves, to serve


  • Step 1

    Heat 1 tablespoon oil in a large saucepan over high heat. Add mince, capsicum and onion. Cook, breaking up mince with a wooden spoon, for 6 to 8 minutes or until browned.

  • Step 2

    Stir in purée, sauces, sugar, mustard and vinegar. Bring to the boil. Reduce heat to low. Simmer for 15 to 20 minutes or until thickened.

  • Step 3

    Meanwhile, grate potato over a bowl lined with paper towel. Squeeze out excess moisture from potato. Transfer to a clean bowl. Add flour. Season with salt and pepper. Stir to combine.

  • Step 4

    Heat remaining oil in a large frying pan over medium-high heat. Divide potato mixture into 8 equal portions. Add 1 portion to pan. Flatten with a spatula. Repeat to make 4 hash browns. Cook for 2 minutes each side or until golden and cooked through. Drain on paper towel. Repeat with remaining portions.

  • Step 5

    Place ½ the hash browns on serving plates. Top with sloppy joe mixture and cheese. Drizzle with a little extra barbecue sauce. Top with jalapeños and remaining hash browns. Serve with salad.
