  • 60g butter, chopped

  • 2/3 cup milk

  • 1 1/2 cups self-raising flour

  • 1 tablespoon ground ginger

  • 1 teaspoon ground allspice

  • 1/2 cup dark brown sugar

  • 410g can sliced pears in natural juice, drained well, chopped (see Notes)

  • Icing sugar mixture, to serve

  • Vanilla ice-cream, to serve

  • Golden syrup, extra, to drizzle


  • 2 1/2 teaspoons cornflour

  • 1/2 cup dark brown sugar

  • 1 1/2 cups boiling water

  • 1/4 cup golden syrup


  • Step 1

    Place butter and milk in a microwave-safe jug. Microwave on HIGH (100%) for 1 minute 20 seconds, stirring halfway through, or until butter has melted.

  • Step 2

    Sift flour, ginger and allspice into a bowl. Stir in sugar. Add milk mixture to flour mixture. Stir to combine. Stir in pears. Spoon mixture into a 6cm-deep, 8-cup-capacity, microwave-safe dish. Level top with a spatula.

  • Step 3

    Make Sauce Place cornflour and sugar in a heatproof jug. Gradually add combined boiling water and golden syrup, stirring, until smooth and combined. Don’t let the pudding stand for too long once it’s cooked, or it will soak up all of the delicious sauce.

  • Step 4

    Pour sauce over the back of a large metal spoon to cover pudding batter. Sit dish on an upturned microwave-safe plate. Cook, uncovered, on MEDIUM (50%) for 12 to 14 minutes or until a skewer inserted into edge of pudding comes out clean. Stand for 1 minute. Dust with icing sugar. Top with vanilla ice-cream and drizzle with golden syrup. Serve immediately.
