Ingredients

  • 1 1/2 tablespoons rice bran oil

  • 4 (300g each) French-trimmed lamb shanks

  • 1 cinnamon stick

  • 3 cardamom pods, bruised

  • 1 teaspoon cumin seeds

  • 1 medium brown onion, chopped

  • 4 garlic cloves, chopped

  • 4cm piece fresh ginger, peeled, grated

  • 2 red birdseye chillies, finely chopped

  • 1 tablespoon ground turmeric

  • 2 teaspoons garam masala

  • 1/2 teaspoon ground coriander

  • 1 teaspoon sea salt

  • 400g can crushed tomatoes

  • 1/2 cup Tamar Valley Greek Style Yoghurt

  • 6 large (480g) fresh apricots, quartered

  • Steamed basmati rice, to serve

  • Fresh coriander sprigs, to serve

Method

  • Step 1

    Heat 1 tablespoon oil in a large, heavy-based saucepan over medium-high heat. Cook shanks, in batches, turning for 5 minutes or until browned. Transfer to a plate. Add remaining oil to pan. Add cinnamon, cardamom and cumin. Cook, stirring constantly, for 1 to 2 minutes or until fragrant. Add onion. Cook, stirring constantly, for 3 to 4 minutes or until softened.

  • Step 2

    Add garlic, ginger and chilli. Cook, stirring constantly, for 1 to 2 minutes or until fragrant. Add turmeric, garam masala, ground coriander and sea salt. Cook, stirring constantly, for 1 minute or until fragrant. Add tomatoes and 1 cup cold water. Stir to combine. Add yoghurt, 1 tablespoon at a time, stirring after each addition, until combined. Return shanks to pan. Bring to the boil. Reduce heat to low. Simmer, covered, for 1 hour 30 minutes or until lamb starts to become tender.

  • Step 3

    Turn shanks. Simmer, covered, for 1 hour 30 minutes or until lamb is falling from the bone. Transfer shanks to a plate. Cover to keep warm.

  • Step 4

    Increase heat to medium. Simmer sauce for 10 minutes or until slightly thickened. Add apricots. Stir to combine. Simmer for 10 minutes or until apricots are tender and sauce has thickened. Serve shanks with rice and sauce, topped with coriander sprigs.
