If you love your food pickled, you can’t go past this fennel recipe. Orange, coriander and chilli flavours make it a perfect addition to your dinner table.

Ingredients

185ml (3/4 cup) white wine vinegar

125ml (1/2 cup) water

1 1/2 tablespoons caster sugar

1 teaspoon salt

1 (about 400g) fresh fennel

6 strips orange rind

1 teaspoon coriander seeds

2 small dried chillies (optional)
Method

Step 1
Place vinegar, water, sugar and salt in a small saucepan over medium heat. Simmer for 3 minutes. Set aside.

Step 2
Remove the core from the fennel. Thinly slice on a mandolin. Divide fennel along with rind, coriander, and chillies between two sterilized jars. Use a spoon to press firmly into the jars. Carefully pour in the hot liquid. Seal and set aside to cool. Leave for 2-3 days before opening.
