  • 4 rindless bacon rashers

  • 4 (about 600g) beef fillet steaks

  • 1 tablespoon olive oil

  • 1 small red onion, halved, thinly sliced

  • 1 x 420g can cannellini beans, drained, rinsed

  • 5 (about 210g) marinated artichoke hearts, quartered

  • 80g (1/2 cup) pitted kalamata olives

  • 65g goat’s cheese, crumbled

  • 1/2 cup fresh basil leaves


  • Step 1

    Wrap 1 rasher of bacon around each piece of steak. Use toothpicks to secure.

  • Step 2

    Place a large non-stick frying pan over medium-high heat. Add the beef and cook for 3 minutes each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 minutes to rest.

  • Step 3

    Meanwhile, heat the oil in the pan over medium heat. Add the onion and cook, stirring occasionally, for 2 minutes or until soft. Add the beans, artichoke and olives and cook, stirring, for 1 minute or until heated through.

  • Step 4

    Divide the onion mixture among serving plates. Sprinkle with the goat’s cheese and basil. Top with beef and serve.
