Yummy Bacon, egg & cheese breakfast muffins Recipe

Crispy fried bacon, fried eggs and crisp lettuce combined in a warm breakfast muffin.

  • 175g pkt shortcut bacon

  • 20g butter

  • 50g mesclun lettuce leaves

  • Extra virgin olive oil cooking spray

  • 4 eggs

  • 4 slices tasty cheese

  • 4 English muffins

  • Barbecue sauce, to drizzle


  • Step 1

    Spray large non-stock frying pan with oil. Cook bacon on medium heat for 2-3 mins until brown. Remove. Place 4 egg rings in same pan, add little butter inside rings to grease pan. Carefully crack eggs into rings, cook for 1-3 mins until done as you like.

  • Step 2

    Top each egg with 1 slice of cheese and bacon. Reduce heat to low and cook for 1 min until cheese melts.

  • Step 3

    Meanwhile, split and lightly toast muffins. Top base of each with an egg stack, a drizzle of sauce and lettuce. Sandwich together with top of muffin to serve.
