Tasty Tuscan beef burritos Recipe

Burritos make a fun family meal, and we’ve given this classic Tex-Mex dish a tasty twist with Italian-style seasoning and tangy Greek yoghurt.
Forget cutlery – roll-your-own burritos are just the thing for Thursday night.

Ingredients

  • 1 tablespoon extra virgin olive oil

  • 1 small brown onion, finely chopped

  • 500g beef mince

  • 1 1/4 teaspoons Tuscan seasoning

  • 1/2 large avocado, stone removed, peeled

  • 70g (1/4 cup) Greek-style natural yoghurt

  • 8 flour tortillas

  • 1/2 cos lettuce, leaves shredded

  • 200g tomatoes, coarsely chopped

Method

  • Step 1

    Heat the oil in a large non-stick frying pan over medium-high heat. Add the onion and cook, stirring, for 3 minutes or until soft. Add the mince and seasoning. Increase heat to high. Cook, stirring with a wooden spoon to break up any lumps, for 6 minutes or until the mince changes colour.

  • Step 2

    Mash the avocado in a small bowl. Stir in the yoghurt. Warm the tortillas following packet directions.

  • Step 3

    Transfer the mince mixture to a serving bowl. Serve with avocado mixture, tortillas, lettuce and tomato.
