  • 1/3 cup extra-virgin olive oil

  • 200g crusty Italian bread, cut into 2cm pieces

  • 8 lamb loin chops

  • 2 teaspoons sumac

  • 250g cherry tomatoes, halved

  • 1/2 cup fresh basil leaves, torn

  • 1 tablespoon red wine vinegar


  • Step 1

    Heat 1 tablespoon oil in a frying pan over medium-high heat. Cook bread, stirring, for 5 minutes or until golden and crisp. Transfer to a bowl.

  • Step 2

    Place chops, 1 tablespoon remaining oil and sumac in a bowl. Season with salt and pepper. Toss to combine. Heat a barbecue plate or chargrill over medium-high heat. Cook chops for 4 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil. Rest for 4 minutes.

  • Step 3

    Meanwhile, add tomatoes and basil to bread. Drizzle with vinegar and remaining oil. Toss to combine. Stand for 3 minutes for flavours to develop. Serve chops with tomato mixture.
