  • 1 tablespoon olive oil

  • 1kg thick beef sausages

  • 1 brown onion, diced

  • 2 garlic cloves, crushed

  • 1 long red chilli, finely chopped

  • 2 tablespoons oregano leaves, chopped

  • 2 x 400g cans Val Verde diced tomatoes

  • 400g can cannellini beans, drained, rinsed

  • toasted crusty sourdough bread, to serve


  • Step 1

    Heat oil in a large saucepan over medium heat. Cook sausages, turning occasionally, for 8 to 10 minutes or until cooked through. Transfer to a plate lined with paper towel. Cover to keep warm.

  • Step 2

    Add onion to pan. Cook, stirring often, for 3 to 4 minutes or until tender. Add garlic, chilli and oregano. Cook, stirring, for 1 minute. Return sausages to pan. Add tomatoes. Cook, uncovered, for 5 minutes or until sauce thickens. Add beans and cook for 5 to 6 minutes or until beans are heated through.

  • Step 3

    Place sausages on plates. Spoon over tomato and bean mixture. Serve with toasted bread.
