Tasty Ricotta, salami and rocket panini Recipe

Be the envy of the office by bringing this delicious panini to work and toasting it in the sandwich press.
Ricotta, salami and rocket panini

  • 2 Turkish bread rolls, split in half

  • 150g ricotta cheese

  • 8 slices Danish salami

  • 30g baby rocket

  • 1 teaspoon extra virgin olive oil

  • 1 tablespoon black olive tapenade

  • Olive oil cooking spray

  • Stuffed green olives, to serve


  • Step 1

    Preheat a sandwich press.

  • Step 2

    Place roll bases on a board. Spread with ricotta. Top with salami and rocket. Drizzle with oil and season with pepper. Spread cut-side remaining bread with tapenade. Sandwich together. Spray both sides sandwiches with oil.

  • Step 3

    Place in sandwich press. Cook for 4 to 5 minutes or until golden. Serve with olives.
