Potatoes topped with baked beans

Ingredients

  • 12 small potatoes, unpeeled

  • 2 x 220g can baked beans in tomato sauce

  • 1/2 cup (60g) low-fat grated cheddar cheese, to serve

  • 2 teaspoons chopped parsley, to serve

Method

  • Step 1

    Preheat oven to 210°C. Place the potatoes on a baking tray lined with baking paper and cook for 25 minutes or until tender. Remove and set aside for 5 minutes.

  • Step 2

    Meanwhile, heat the baked beans in a small saucepan or microwave oven.

  • Step 3

    Cut a disc out of the top of each potato. Place on serving plates and spoon some baked beans into the cavity of each potato.

  • Step 4

    Combine grated cheese with parsley Sprinkle over each potato. Serve immediately.
