  • 440g can beetroot slices, drained

  • 1/2 cup reduced-fat plain yoghurt

  • 1 garlic clove, peeled, quartered

  • 500g lean lamb mince

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/2 red onion, finely chopped

  • 1 tablespoon chopped fresh flat-leaf parsley leaves

  • 2 teaspoons olive oil

  • 50g mesclun salad mix

  • 4 small Turkish bread rolls, halved, toasted


  • Step 1

    Process beetroot, yoghurt and garlic until smooth. Set aside.

  • Step 2

    Place lamb, cumin, coriander, onion and parsley in a large bowl. Season with salt and pepper. Stir to combine. Shape mixture into four 2cm-thick patties.

  • Step 3

    Heat oil in a large, non-stick frying pan over medium-high heat. Cook patties for 5 to 7 minutes each side or until golden and cooked through.

  • Step 4

    Place salad on roll bases. Top with patties, beetroot mixture and roll tops. Serve.
