7kg cooked leg ham

1 cup honey

2/3 cup firmly packed brown sugar

250g glace ginger, finely chopped

1/3 cup lime juice
Method

Step 1
Place oven shelf in lowest position. Preheat oven to 180°C/160°C fan-forced. Using a sharp knife, cut through ham rind in a zig-zag pattern around shank. Run thumb underneath rind to separate from fat. Peel and remove rind. Score fat in a diamond pattern (see tip). Wrap shank end of ham in foil.

Step 2
Place honey, sugar and ginger in a saucepan over medium-high heat. Bring to the boil. Reduce heat to medium. Simmer for 5 minutes for flavours to develop. Stir in lime juice.

Place ham on a wire rack in a large roasting pan. Spoon over ginger and half the honey mixture. Bake ham, spooning over remaining honey mixture, for 1 hour or until golden. Serve warm or cold.
