  • 5 cups (1.25 litres) water

  • 4 cups (1 litre) Massel vegetable liquid stock

  • 2 cups fine polenta

  • 60g butter

  • 100g mild blue cheese

  • 1 cup shredded parmesan

  • Salt & freshly ground pepper

  • Extra parmesan shavings to serve, optional

  • Lamb cutlets, optional


  • Step 1

    Place water and stock in a medium saucepan. Bring to the boil over heat. Pour in polenta, stirring constantly. Reduce heat to medium-low and cook, stirring constantly, for 25-30 minutes or until thick and creamy.

  • Step 2

    Remove pan from heat and add butter, blue cheese and parmesan. Stir until butter melts and well combined. Taste and season well with salt and pepper.

  • Step 3

    Serve topped with extra parmesan, if desired. Delicious with lamb cutlets.
