  • 150g chicken breast fillet

  • 1/2 teaspoon chicken stock powder

  • 1 celery stick, finely chopped

  • 1 small red apple (such as royal gala), cored, finely chopped

  • 1 spring onion, finely chopped

  • 1 tablespoon finely chopped pecan nuts

  • 1 small lemon, rind finely grated, juiced

  • 2 teaspoons garlic aioli

  • 2 teaspoons chopped fresh dill

  • 2 Tip Top Sandwich Thins


  • Step 1

    Place the chicken in a microwave-safe bowl. Cover with cold water. Add the stock powder. Cover with 2 sheets of plastic wrap. Cook the chicken in the microwave on High for 5-6 minutes or until just cooked through. Remove the plastic wrap and set aside for a further 8 minutes to continue poaching. Transfer chicken to a plate to cool. Finely chop.

  • Step 2

    Combine the celery, apple, spring onion, pecans, lemon rind, aioli, dill, chicken and 2-3 teaspoons lemon juice in a bowl. Season with salt and pepper and mix well.

  • Step 3

    Split the sandwich thins in half. Divide the filling between 2 pieces. Cover with remaining pieces. Cut in half to serve.
