100g butter

3 bunches English spinach, ends trimmed, washed, dried

1 1/2 tablespoons fresh lemon juice

Pinch of ground nutmeg
Method

Step 1
Melt butter in a saucepan over high heat until foaming. Add the spinach and cook, stirring, for 1 minute or until lightly coated in butter. Cook, covered, shaking the pan occasionally, for 5-6 minutes or until the spinach wilts.

Add the lemon juice and nutmeg. Season with salt and pepper to serve.
