Tasty Aussie burger dinner bowl Recipe

Ingredients

  • 500g sebago potatoes, cut into chips

  • 1/4 cup extra virgin olive oil

  • 700g beef mince

  • 1/3 cup finely chopped fresh chives

  • 4 rashers rindless streaky bacon

  • 1/3 cup smoky barbecue sauce

  • 4 eggs

  • 1/4 pineapple, peeled, cored, finely chopped

  • 60g mixed salad leaves

  • 3 roma tomatoes, thinly sliced

  • 250g packet ready-to-eat baby beetroots, cut into thick wedges

Method

  • Step 1

    Preheat oven to 220C/200C fan-forced. Line a baking tray with baking paper. Combine potato and 1 tablespoon oil on tray. Season. Bake for 45 minutes or until golden.

  • Step 2

    Meanwhile, combine mince and 1/4 cup chives in a bowl. Season. Make 20 patties.

  • Step 3

    Heat 2 teaspoons of remaining oil in a large frying pan over medium-high heat. Cook bacon for 2 minutes each side or until crisp. Transfer to paper towel to drain. Add patties to pan. Cook for 4 minutes each side or until just cooked through. Combine barbecue sauce and ΒΌ cup water in a bowl. Add to pan. Cook, tossing, for 2 minutes or until patties are coated and sauce has thickened slightly. Transfer to a bowl. Cover to keep warm. Wash and dry pan.

  • Step 4

    Heat 1 tablespoon remaining oil in same pan over high heat. Cook eggs for 2 minutes or until white is set and yolk is still runny.

  • Step 5

    Meanwhile, combine pineapple and remaining chives and oil in a bowl. Season.

  • Step 6

    Place salad mix, chips, tomato, eggs patties, bacon and beetroot in serving bowls. Top with pineapple mixture. Serve.
