Lentils with mashed vegetables are a delicious and healthy meat substitute in these tasty koftas.

Ingredients

200g (1 cup) Basmati rice

1/4 teaspoon saffron threads

50g butter

2 large coliban potatoes, cut into 2cm pieces

2 carrots, peeled, cut into 2cm pieces

95g (1/2 cup) canned brown lentils, rinsed, drained

4 tablespoons fresh coriander

40g (1/4 cup) plain flour
-
1 teaspoon garam masala
-
1 x 250g jar korma simmer sauce (Patak’s brand)

1 ripe tomato, finely chopped
Method

Step 1
Cook rice with saffron following packet directions (approx 15 min). Drain and return to pan. Stir in half the butter and cover to keep warm.

Meanwhile, cook potato and carrot in a saucepan of boiling water for 6-7 minutes. Drain. Place in a bowl with lentils. Roughly mash. Add 2 tablespoons chopped coriander, flour and garam masala. Combine well. Divide into 12 portions and shape into 8cm patties. Heat remaining butter in a frying pan over high heat until foaming. Add patties and cook for 2-3 minutes each side or until golden.

Meanwhile, combine korma sauce and tomato in a frying pan over medium heat. Cook, stirring, for 2-3 minutes or until hot.

Top rice with koftas and sauce. Sprinkle with coriander leaves.
