  • 15g butter, melted

  • 750g cauliflower florets

  • 1/3 cup olive oil

  • 1 red onion, finely chopped

  • 1 tablespoon finely chopped fresh thyme leaves

  • 6 eggs

  • 1 cup self-raising flour

  • 1/2 teaspoon ground turmeric

  • 1 1/2 cups grated cheddar

  • 1 tablespoon white sesame seeds

  • 1 teaspoon caraway seeds

  • baby rocket, to serve

Bacon crumble

  • 1/2 cup plain flour

  • 35g butter, chopped

  • 150g Primo Bacon Shortcut Rindless, finely chopped


  • Step 1

    Preheat oven to 180C or 160C fan-force. Line base of a 22cm springform cake pan with baking paper. Brush sides with melted butter. Combine seeds and toss around inside of pan so they stick to sides.

  • Step 2

    Cook cauliflower in a steamer over a saucepan of boiling water for 20 minutes or until tender. Drain well. Arrange in a single layer on a plate lined with paper towel.

  • Step 3

    Heat oil in a large frying pan over medium heat. Cook onion and thyme, stirring, for 5 minutes or until softened. Set aside to cool.

  • Step 4

    Meanwhile, make bacon streusel. Place flour and butter in a medium bowl. Rub in butter until clumps form. Stir through bacon.

  • Step 5

    Transfer to onion mixture to a large bowl with eggs, flour, turmeric and cheese. Season and stir to combine. Stir through cauliflower.

  • Step 6

    Pour cauliflower mixture into prepared pan. Sprinkle with bacon streusel. Spray with oil. Place pan on an oven tray (see note). Bake for 1 hour or until golden brown and set (a knife inserted into centre of cake should come out clean). Stand for 20 minutes before serving warm with mixed leaves.
