  • 500g packet frozen broad beans

  • 1 tablespoon olive oil

  • 1 small red onion, finely chopped

  • 1 garlic clove, crushed

  • 2 roma tomatoes, finely chopped

  • 1 tablespoon finely chopped fresh flat-leaf parsley leaves


  • Step 1

    Place broad beans in a heatproof bowl. Cover with boiling water. Set aside for 2 minutes. Drain. Peel broad beans and discard skins.

  • Step 2

    Heat oil in a medium frying pan over medium heat. Add onion and garlic. Cook, stirring, for 5 minutes or until softened.

  • Step 3

    Add broad beans and tomato. Cook, stirring occasionally, for 5 minutes or until heated through. Stir in parsley. Serve.
