Beef skewers with mint and lemon sauce

  • 2 (about 200g each, 2cm thick) beef sirloin steaks, thinly sliced into 5mm-thick strips

  • 1/2 teaspoon ground cumin

  • Sea salt flakes & freshly ground black pepper

  • 60ml (1/4 cup) vegetable oil

  • 1 1/2 cups firmly packed fresh mint leaves

  • 1 tablespoon finely grated fresh ginger

  • 2 fresh long green chillies, coarsely chopped

  • 2 tablespoons fresh lemon juice


  • Step 1

    Thread beef on skewers and place in a glass or ceramic dish. Sprinkle with cumin and season with salt and pepper.

  • Step 2

    Preheat a chargrill or barbecue plate on high. Brush skewers with 1 tablespoon of oil. Cook on grill for 2-3 minutes each side or until brown and cooked to your liking. Transfer to a plate and cover loosely with foil. Set aside for 5 minutes to rest.

  • Step 3

    Meanwhile, place the remaining oil, mint, ginger, chilli and lemon juice in the jug of a blender and blend until smooth. Transfer to a small serving bowl.

  • Step 4

    Arrange skewers on a serving platter and serve with mint & lemon sauce.
