Sweet pumpkin pies

Ingredients

  • 1 1/2 cups (225g) plain flour

  • 150g cold butter, chopped

  • 1-2 tablespoons water

  • 1 1/2 cups cooked pumpkin, mashed

  • 1 cup (250ml) evaporated milk

  • 1/2 cup (110g) brown sugar

  • 3 eggs, lightly beaten

  • 2 tablespoons maple syrup

  • 1 teaspoon cinnamon

  • 1/2 teaspoon ground ginger

  • 1/2 teaspoon cloves

  • 1/2 teaspoon ground nutmeg

Method

  • Step 1

    Preheat oven to 180°C. Grease 6 x 10cm fluted flan tins. Process flour and butter until crumbly. Add 1-2 tablespoons water, process until pastry just comes together.

  • Step 2

    Turn onto a lightly floured surface and knead gently until smooth. Divide into 6 equal pieces. Roll out and line each pie dish with pastry. Trim edges. Line with non-stick baking paper and fill with dried beans or rice. Bake for 10 minutes. Remove baking beans and paper and bake for 5 minutes more. Cool.

  • Step 3

    Mix mashed pumpkin, milk, sugar, eggs, maple syrup, and spices together. Pour into pastry cases and bake for 25-30 minutes until set. Cool. Serve with cream.
