These crunchy fritters are low in fat, quick to prepare and chock full of veg. Perfect!

Ingredients

500g orange sweet potato, peeled, grated

200g shaved leg ham, chopped

5 green onions, thinly sliced

1/2 cup chopped fresh flat-leaf parsley leaves

1 tablespoon dijon mustard

1/3 cup plain flour

1 large egg, lightly beaten

1 tablespoon olive oil

Salad (see note), to serve

Tomato chutney, to serve
Method

Step 1
Preheat oven to 170C/150C fan-forced. Place a wire rack over a baking tray lined with baking paper.

Place potato, ham, onion, parsley, mustard and flour in a large bowl. Stir to combine. Season with pepper. Stir in egg.

Heat half the oil in a large non-stick frying pan over medium-high heat. Place 1/4 cup mixture into pan, flatten slightly. Repeat to make 4 fritters. Cook for 3 to 4 minutes each side or until cooked through. Transfer fritters to prepared tray. Place in oven to keep warm. Repeat to make a total of 12 fritters.
