We’ve taken the humble ham and cheese toastie and rocketed it into the stratosphere with Dijon mustard and a caramelised onion relish.

  • 16 slices white bread

  • 30g butter, melted

  • 1 teaspoon Dijon mustard

  • 50g vintage cheddar, coarsely grated

  • 60g thinly sliced ham

  • 1 tablespoon caramelised onion relish, plus extra, to serve

  • 1 teaspoon fresh thyme leaves, plus extra, to serve


  • Step 1

    Preheat a pie maker. Use an 8cm round pastry cutter to cut a disc from each bread slice. Brush 1 side of each disc with the butter.

  • Step 2

    On unbuttered side, spread 8 bread discs with mustard. Top with half the cheese, half the ham then all relish and thyme. Top with remaining ham and cheese. Place remaining bread discs, buttered-side up, on top.

  • Step 3

    Carefully place 4 stacks into the pie maker and close the lid. Cook for 5 minutes or until golden brown.

  • Step 4

    Lift out the toasties and transfer to a wire rack. Repeat with remaining stacks.

  • Step 5

    Set aside toasties to cool slightly (filling will be hot) then serve with extra relish and thyme.
