  • 4 eggwhites

  • 1 cup (200g) caster sugar

  • 2 teaspoons cornflour

  • 1 teaspoon white vinegar

  • Icing sugar, to dust

  • 100g strawberries, washed, hulled, thinly sliced

  • 1 tablespoon Cointreau

  • 300ml thickened cream

Lime curd

  • 50g butter, chopped

  • 1/2 cup (100g) caster sugar

  • 1 egg, lightly whisked

  • 2 teaspoons finely grated lime rind

  • 1/4 cup (60ml) lime juice


  • Step 1

    To make the lime curd, combine the butter, sugar, egg, lime rind and juice in a small saucepan over low heat. Stir constantly with a wooden spoon for 5 minutes or until mixture boils and thickens. Remove from heat. Strain through a fine sieve into a medium bowl. Cover with plastic wrap and place in the fridge to chill for 1 hour.

  • Step 2

    Meanwhile, preheat oven to 180°C. Grease and line a 24x30cm Swiss-roll pan with baking paper, allowing the sides to overhang.

  • Step 3

    Use an electric mixer to whisk the eggwhites in a clean, dry bowl until firm peaks form. Gradually add the sugar, 1 tablespoon at a time, whisking constantly until mixture is thick and glossy. Add the cornflour and vinegar and use a metal spoon to gently fold. Spoon into prepared pan; smooth surface. Bake in preheated oven for 10 minutes or until just starting to brown.

  • Step 4

    Place a clean tea towel on a clean work surface. Top with a large sheet of baking paper. Dust with icing sugar. Turn the pavlova, top-side down, onto the dusted baking paper. Cool for 20 minutes.

  • Step 5

    Combine the strawberries and Cointreau in a medium bowl. Set aside to macerate.

  • Step 6

    Whisk the cream until soft peaks form. Spread cream and half the lime curd over the pavlova. Top with one quarter of the strawberries. Carefully roll pavlova to enclose filling. Keep pavlova wrapped. Place on a tray and in the fridge for 1 hour to chill.

  • Step 7

    Unwrap pavlova; dust with icing sugar. Slice and serve drizzled with lime curd and topped with remaining strawberries.
