Enjoyable Pasta with tuna, breadcrumbs & rocket Recipe

Ingredients

  • 3 slices white bread, crusts removed

  • 400g penne rigate

  • 2 teaspoons olive oil

  • 2 (about 200g each, 2cm-thick) tuna steaks

  • 2 bunches rocket, ends trimmed, washed, dried, coarsely torn

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon extra virgin olive oil

  • Freshly ground black pepper

  • 2 teaspoons finely grated lemon rind

Method

  • Step 1

    Preheat oven to 180C. Place the bread in the bowl of a food processor and process until coarse crumbs form. Spread the breadcrumbs over a baking tray. Bake in preheated oven, stirring occasionally, for 10 minutes or until crisp and golden. Remove from oven and set aside to cool.

  • Step 2

    Cook the pasta in a large saucepan of boiling water following packet directions or until al dente. Drain well and return to the pan.

  • Step 3

    Meanwhile, heat the olive oil in a large non-stick frying pan over medium-high heat. Add the tuna steaks and cook for 3 minutes each side for medium or until cooked to your liking. Transfer to a plate. Cover with foil and set aside for 5 minutes to rest. Use a fork to flake tuna into large pieces.

  • Step 4

    Add the rocket, lemon juice and extra virgin olive oil to the pasta. Season with pepper and gently toss until well combined.

  • Step 5

    Place the breadcrumbs and lemon rind in a medium bowl and stir to combine. Divide the pasta mixture among serving bowls. Top with the tuna and sprinkle with breadcrumb mixture. Season with pepper and serve immediately.
