Enjoyable Celery, radish and cucumber with orange dressing Recipe

This crunchy vegetable salad is a healthy addition to the summer dining table.
Celery, radish and cucumber with orange dressing

  • 2 bunches celery, leaves trimmed, coarsely chopped

  • 1 bunch radishes, washed, stems and roots trimmed, halved, thinly sliced

  • 6 Lebanese cucumbers, halved lengthways, coarsely chopped

  • 2 carrots, peeled

  • 1 cup loosely packed fresh mint leaves

  • 185ml (3/4 cup) fresh orange juice

  • 55g (1/4 cup) caster sugar

  • 60ml (1/4 cup) extra virgin olive oil

  • 3 teaspoons apple cider vinegar

  • Salt & freshly ground black pepper


  • Step 1

    Place the celery, radish and cucumber in a large bowl. Use a vegetable peeler to slice the carrot lengthways into thin ribbons. Use a large sharp knife to cut the ribbons into matchsticks. Add the carrot and mint leaves to the celery mixture, and gently toss until just combined.

  • Step 2

    Combine the orange juice and sugar in a small saucepan. Bring to the boil over medium heat. Reduce heat to low and simmer for 7 minutes or until the orange juice mixture is reduced by two-thirds. Remove from heat and set aside for 5 minutes to cool slightly.

  • Step 3

    Add the olive oil and vinegar to the orange syrup and stir until combined. Taste and season with salt and pepper.

  • Step 4

    Drizzle the celery, radish and cucumber with the orange dressing and gently toss to combine.
