  • 2 eggs

  • 1/3 cup milk

  • 1/2 teaspoon ground cinnamon

  • 60g butter, chopped

  • 4 crumpets, cut in half

  • 1/4 cup brown sugar

  • 2 large bananas, sliced

  • 4 scoops vanilla ice-cream


  • Step 1

    Whisk eggs, milk and cinnamon together in a shallow dish.

  • Step 2

    Melt 20g butter in a large frying pan over medium heat. Dip crumpet pieces in egg mixture until soaked. Drain excess egg mixture. Cook crumpet pieces for 2 minutes each side or until golden. Transfer to a plate. Cover to keep warm.

  • Step 3

    Add sugar and remaining butter to pan. Cook for 1 minute or until melted. Add banana. Cook, tossing, for 2 minutes or until heated through and well coated in sticky sugar mixture. Divide crumpet pieces between plates. Top with banana mixture and a scoop of ice-cream. Serve.
