Roasting brussels sprouts gives amazing caramelisation and flavour.

500g brussels sprouts, halved
1 red apple, cut into thick wedges
1 red onion, cut into thick wedges
1 1/2 tablespoons olive oil
60g (1/3 cup) roasted almonds, coarsely chopped
Preheat oven to 200°C. Line a large baking tray with foil. Place brussels sprouts, apple and onion on prepared tray. Drizzle with oil and season well. Toss to combine.
Roast for 25 minutes, stirring once, or until brussels sprouts are golden. Sprinkle with almond.
