Rare roast beef with coriander noodles

  • 200g dried thick rice noodles

  • 1 bunch coriander, roots trimmed, stems reserved

  • 2 tablespoons unsalted peanuts

  • 2 teaspoons caster sugar

  • 1 tablespoon fish sauce

  • 1 tablespoon sunflower oil

  • Zest and juice of 1 lime

  • 200g leftover thinly sliced rare roast beef, cut into thin strips

  • 1/3 cup (30g) desiccated coconut, toasted

  • 2 tablespoons fried Asian shallots (see note)

  • 1 long red chilli, seeds removed, sliced

  • Extra lime halves, to serve


  • Step 1

    Cook noodles according to the packet instructions. Drain and refresh under cold water. Set aside.

  • Step 2

    Meanwhile, place coriander stems and three-quarters of the sprigs in a food processor with peanuts, sugar, fish sauce, oil and lime zest and juice. Whiz until a smooth paste and season.

  • Step 3

    Toss noodles with beef, coconut and dressing to combine. Divide among bowls. Scatter over shallots, chilli and remaining coriander sprigs. Serve with lime halves.
