Ingredients

  • 500g sweet potato, cut into 2.5cm thick chunks

  • 2 red onions, cut into wedges

  • 2 pears, cored, cut into wedges

  • 1/4 cup Coles Brand Pure Olive Oil

  • 4 pork cutlets

  • 1/4 cup shredded sage leaves

Method

  • Step 1

    Preheat oven to 200°C or 180°C fan.

  • Step 2

    Place vegetables and pears in a roasting pan. Drizzle with 2 tbsp oil and toss to coat. Arrange in a single layer and roast for 20 mins.

  • Step 3

    Meanwhile, heat remaining oil in a large heavy-based frying pan over medium-high heat. Trim excess fat from cutlets and season. Cook for 2 mins each side or until golden brown.

  • Step 4

    Remove pan from oven and sprinkle with 2 tbsp of sage. Place cutlets on top of vegetables and roast for a further 20 mins for medium rare or until cooked to your liking. Sprinkle with remaining sage.
