Ingredients

  • 2 eggs

  • 125g can creamed corn

  • 1/2 cup cream

  • 1/3 cup parmesan, grated

  • 1/4 cup semi-dried tomatoes, chopped

  • 3 green onions, finely chopped

  • 2 rashers bacon, trimmed, finely chopped

  • 1 tablespoon parsley, chopped

Method

  • Step 1

    Preheat oven to 180C. Grease 2 x 12-hole mini muffin pans.

  • Step 2

    In a bowl, whisk together all ingredients. Season to taste.

  • Step 3

    Pour mixture evenly into pans. Bake for 10-15 mins or until firm. Leave to cool in pan for 5 mins, then transfer to a wire rack to cool completely. Store in an airtight container in the fridge until required.
