250g large green olives

80ml (1/3 cup) extra virgin olive oil

2 garlic cloves, thinly sliced

1 tablespoon balsamic vinegar

1 teaspoon finely grated lemon rind

1/4 teaspoon dried chilli flakes

Caperberries, to serve
Spiced almonds

1 tablespoon extra virgin olive oil

250g blanched almonds

2 teaspoons sea salt flakes

1/2 teaspoon ground paprika

Step 1
Place the olives, oil, garlic, vinegar, lemon rind and chilli in a large bowl. Cover with plastic wrap and set aside for 30 minutes to develop the flavours.

Step 2
Meanwhile, to make the spiced almonds, heat the oil in a large frying pan over medium heat. Add the almonds and cook, stirring, for 3-4 minutes or until golden brown and fragrant. Remove from heat. Use a slotted spoon to transfer almonds to a heatproof bowl. Add the sea salt flakes and paprika and stir to coat the almonds in spice mixture. Set aside for 20 minutes to cool.
