  • 30g (1 1/2 tablespoons) butter

  • 1 red onion, finely chopped

  • 3 garlic cloves, crushed

  • 500g button mushrooms, thickly sliced

  • 1/3 cup chopped fresh continental parsley

  • 1 tablespoon fresh lemon juice

  • Salt & freshly ground black pepper

  • 30cm baguette (French stick), cut into 1cm-thick slices


  • Step 1

    Melt the butter in a medium non-stick frying pan over medium heat. Add the onion and garlic, and cook, uncovered, stirring often, for 4 minutes or until the onion is slightly soft. Increase heat to medium-high and add the mushrooms. Cook, stirring, for 3-4 minutes or until the mushrooms are tender and light golden. Stir in the parsley and lemon juice, and cook, stirring, for 1 minute or until well combined and heated through. Season with salt and pepper.

    Toast the baguette slices and place on serving plates. Top with the garlic mushrooms and serve immediately.
