Crostini with goats cheese

  • 12 slices Italian-style bread or sourdough bread stick

  • 200g goats cheese

  • 2 vine-ripened tomatoes, seeds removed and flesh diced.

  • 2 tablespoons basil, roughly chopped

  • 1 tablespoon olive oil,

  • salt and pepper


  • Step 1

    Preheat oven to 170°C. Cut bread into 12 x 1cm-thick slices. Place on an oven tray lined with baking paper. Brush each slice of bread with a little olive oil and toast for 4-5 minutes or until crisp. Remove from oven and set aside. Mix tomatoes with olive oil, basil, salt and pepper. Spread a little goats cheese on each crostini, top with some tomato and basil mixture, and serve.
