  • 120g pkt Coles Brand Baby Spinach

  • 1 1/4 cups Coles Brand Milk

  • 3 eggs

  • 1/2 cup Coles Brand Shredded Australian Tasty Cheddar

  • 6 thick slices Vienna loaf, halved crossways

  • 8 cherry vine tomatoes, cut from vine

  • 120g pkt Coles Brand 4 Leaf Salad Mix

  • 1/4 cup French-style dressing

  • 2 tbsp chopped flat-leaf parsley


  • Step 1

    Preheat oven to 180°C or 160°C fan. Grease four 1-cup shallow ovenproof dishes. Place the spinach in a bowl. Cover with boiling water. Stand for 1 min or until wilted. Drain. Refresh under cold water, then squeeze out excess liquid.

  • Step 2

    Whisk the milk, eggs and cheddar in a jug. Season. Layer bread and spinach in prepared dishes. Pour over milk mixture. Place 2 tomatoes in each dish, pressing lightly into egg mixture. Bake for 25 mins or until just set.

  • Step 3

    Meanwhile, place salad mix in a bowl. Drizzle over dressing. Toss gently to combine.

  • Step 4

    Top strata with parsley. Serve with salad.
