Prep Time : 6:25 | Cook Time : 1:10 | Total Time : 7:35 | Serving : 12 person.

  • 250g packet Butternut Snap biscuits

  • 2 teaspoons finely grated orange rind

  • 1/3 cup hazelnut meal

  • 75g butter, melted

  • 750g cream cheese, softened

  • 1 cup caster sugar

  • 3 eggs

  • 1/4 cup caramel spread

  • 1 orange, peeled, sliced

  • 2 tablespoons brown sugar

  • Step 1

Preheat oven to 150C/130C fan-forced. Grease a 22cm-round (base) springform pan. Line base and side with baking paper.

  • Step 2

Using a food processor, process biscuits until finely chopped. Add orange rind and hazelnut meal. Process until well combined. Add butter. Process until combined. Press mixture over base of prepared pan. Refrigerate for 10 minutes.

  • Step 3

Meanwhile, using an electric mixer, beat cream cheese and caster sugar together for 5 minutes or until light and fluffy. Add eggs, 1 at a time, beating until combined after each addition. Pour mixture over prepared base. Drizzle with caramel. Using a butter knife, swirl caramel through top of mixture. Place pan on a baking tray with sides.

  • Step 4

Bake for 50 minutes to 1 hour or until top of cheesecake is just firm (mixture will wobble slightly in centre). Turn off oven. Cool cheesecake in oven with door slightly ajar (see note). Refrigerate for at least 6 hours or overnight, if time permits.

  • Step 5

Remove cheesecake from pan and place on a serving plate. Preheat grill on high. Line a baking tray with foil. Toss orange slices and brown sugar together in a bowl, to coat. Place oranges on prepared tray. Drizzle over any liquid from bowl. Grill for 5 to 7 minutes or until top of orange slices are golden and caramelised, and edges start to char.

  • Step 6

Top cheesecake with orange slices. Serve.
