These tasty little tarts are a perfect light meal, after-school snack or starter before a main meal.

  • 2 tablespoons extra-virgin olive oil

  • 1 tablespoon balsamic vinegar

  • 250g small red cherry tomatoes, halved

  • 250g small yellow cherry tomatoes, halved

  • 1/4 cup basil leaves, finely shredded

  • 1 garlic clove, crushed

  • 3 sheets ready-rolled frozen shortcrust pastry, thawed

  • 80g marinated feta cheese, crumbled


  • Step 1

    Preheat oven to 190°C. Whisk oil, vinegar and salt and pepper in a bowl until well combined. Add tomato, basil and garlic. Toss gently to combine. Set aside for 1 hour.

  • Step 2

    Meanwhile, use a 7cm-round biscuit cutter to cut 24 rounds from pastry. Use to line 24 flat-based patty pan holes.Using a fork, pierce pastry bases, without going all the way through. Bake for 12 minutes or until pastry is light golden. Cool pastry cases in pans for 5 minutes. Transfer to a wire rack to cool completely.

  • Step 3

    Place pastry cases on a plate. Spoon tomato mixture into pastry cases. Sprinkle with feta. Serve.
