Fast Ed’s wild greens are dressed up with a punchy garlic paste.

Ingredients

  • 15 garlic cloves, peeled

  • 250ml (1 cup) vegetable oil

  • 2 teaspoons sea salt

  • 1/2 teaspoon caster sugar

  • 2 bunches winter greens (such as kale or spinach) or wild greens

  • Sea salt flakes, extra

  • Freshly ground black pepper

  • Juice of 1 lime

Method

  • Step 1

    Combine the garlic, oil, salt and sugar in a blender and purée until very creamy and light. Set aside.

  • Step 2

    Cut the greens into 15cm lengths, then steam until just tender. Season with extra salt and the pepper, then squeeze over the lime juice. Drizzle over the garlic paste.
