In this special recipe, beef is rubbed in spices and barbecued until medium-rare, sliced thick and served with herb mayo.

  • 2 tablespoons olive oil

  • 3kg beef sirloin roast

  • 2 teaspoons ground cumin

  • 2 teaspoons ground coriander

  • 1 teaspoon sweet paprika

  • 2/3 cup whole egg mayonnaise

  • 2 tablespoons parsley, finely chopped

  • 1 tablespoon fresh thyme leaves, finely chopped


  • Step 1

    Preheat a covered barbecue to 180C (if yours has 3 burners, light the two outside ones and leave centre one unlit; if you have 2 burners, light one side only).

  • Step 2

    Brush olive oil over meat then rub with combined spices and a good pinch of salt and pepper. Sear meat all over on hotplate until brown then place in a foil baking dish. Sit the dish over the unlit burner, lower the barbecue lid and cook for 1 hr 15 mins for medium-rare (recommended).

  • Step 3

    Remove meat from barbecue, cover loosely with foil and rest for at least 20 mins (serve at room temperature). Remove the string from the beef and slice thickly to serve.

  • Step 4

    To make Herb Mayo: Combine mayonnaise and herbs in a bowl, then refrigerate until needed. Serve with beef accompanied by side dishes.
