You won’t be able to stop dipping once you taste this capsicum dip.

1 large red capsicum, quartered
1 garlic clove, crushed
1 small red chilli, deseeded, chopped
2 tablespoons chopped fresh flat-leaf parsley leaves
Preheat a barbecue plate or chargrill on high. Cook capsicum, skin-side down, for 3 minutes or until blistered and blackened. Place in a plastic bag. Seal. Stand for 10 minutes. Peel away skin. Roughly chop.
Process capsicum, feta, garlic, chilli and parsley until smooth. Refrigerate in an airtight container.
