  • 1 large red capsicum, quartered

  • 150g feta

  • 1 garlic clove, crushed

  • 1 small red chilli, deseeded, chopped

  • 2 tablespoons chopped fresh flat-leaf parsley leaves


  • Step 1

    Preheat a barbecue plate or chargrill on high. Cook capsicum, skin-side down, for 3 minutes or until blistered and blackened. Place in a plastic bag. Seal. Stand for 10 minutes. Peel away skin. Roughly chop.

  • Step 2

    Process capsicum, feta, garlic, chilli and parsley until smooth. Refrigerate in an airtight container.
