Parmesan coated chicken with rosti

Ingredients

  • 125g grated parmesan cheese

  • 1/2 cup fresh flat-leaf parsley leaves, finely chopped

  • 1kg chicken tenderloins

  • olive oil cooking spray

  • 750g sebago potatoes, peeled, coarsely grated

  • 2 tablespoons olive oil

  • 175g baby green beans, steamed, to serve

Method

  • Step 1

    Preheat oven to 200°C. Line 2 baking trays with baking paper.

  • Step 2

    Combine parmesan, parsley, and salt and pepper in a shallow dish. Coat chicken with parmesan mixture, pressing on with your fingertips. Place chicken onto prepared trays. Spray with oil. Bake for 15 to 18 minutes or until golden and cooked through.

  • Step 3

    Meanwhile, squeeze all moisture from potatoes. Heat oil in a non-stick frying pan over medium heat. Place heaped tablespoonfuls of grated potato into frying pan. Press down with a spatula to form patties. Cook for 3 to 4 minutes each side or until golden and cooked through. Set aside.

  • Step 4

    Serve chicken with rosti and beans.
