  • 4 thick slices (about 1/2 a 515g pkt) Coles Bakery Ginger Loaf Cake

  • 1kg tub Coles Brand Apricot Halves in Fruit Juice

  • 1 cinnamon stick

  • 1 vanilla bean, split

  • 1/4 cup Coles Brand Caster Sugar

  • 1/4 cup double or thickened cream


  • Step 1

    Preheat oven to 180C (160C fan-forced). Wrap cake slices in baking paper, then wrap in foil.

  • Step 2

    Place apricots, in a single layer, and half the fruit juice from the tub in a small baking dish. Stir in cinnamon, vanilla and sugar.

  • Step 3

    Bake cake and apricots for 20 mins or until heated through. Divide cake slices among plates. Top with apricots, syrup and cream.
