1kg tub Coles Brand Apricot Halves in Fruit Juice

1 cinnamon stick

1 vanilla bean, split

1/4 cup Coles Brand Caster Sugar

1/4 cup double or thickened cream

Step 1
Preheat oven to 180C (160C fan-forced). Wrap cake slices in baking paper, then wrap in foil.

Place apricots, in a single layer, and half the fruit juice from the tub in a small baking dish. Stir in cinnamon, vanilla and sugar.

Bake cake and apricots for 20 mins or until heated through. Divide cake slices among plates. Top with apricots, syrup and cream.
